- 1.5 lbs boneless, skinless chicken breasts
- 1 large onion, chopped
- 2 cloves garlic, minced
- 1 (15 ounce) can great Northern beans, rinsed and drained
- 1 (15 ounce) can cannellini beans, rinsed and drained
- 1 (4 ounce) can diced green chilies, undrained
- 4 cups chicken broth
- 1 teaspoon cumin
- 1 teaspoon oregano
- 1/2 teaspoon chili powder
- 1/4 teaspoon cayenne pepper (optional)
- Salt and pepper to taste
- Toppings: shredded cheese, sour cream, avocado, cilantro
Instructions
- Place chicken, onion, garlic, beans, green chilies, chicken broth, cumin, oregano, chili powder, cayenne pepper (if using), salt, and pepper in a slow cooker.
- Cook on low for 6-8 hours or on high for 3-4 hours, or until chicken is cooked through.
- Remove chicken from slow cooker and shred with two forks.
- Return shredded chicken to slow cooker and stir to combine.
- Serve hot with your favorite toppings.
Notes
- Adjust spices to your liking.
- For a thicker chili, mash some of the beans.
- This chili is even better the next day.
