Ingredients

  • 1.5 lbs chicken breasts, cut into 1-inch pieces
  • 1 tbsp Cajun seasoning
  • 1 tbsp olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 cup chicken broth
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper to taste
  • Cooked pasta, for serving

Instructions

  1. Season chicken with Cajun seasoning, salt, and pepper.
  2. Heat olive oil in a pan over medium-high heat. Cook chicken until browned. Remove from pan.
  3. Add onion to the pan and cook until softened. Add garlic and cook for 1 minute.
  4. Pour in chicken broth and scrape up any browned bits.
  5. Stir in heavy cream and Parmesan cheese. Season with salt and pepper.
  6. Return chicken to the pan and simmer until cooked through.
  7. Serve over cooked pasta.

Notes

  • Adjust the amount of Cajun seasoning to your taste.
