Description
These roast potatoes are incredibly crispy on the outside and fluffy on the inside, with a delicious parmesan cheese crust.

- 2 lbs Potatoes, peeled and cubed
- 1/4 cup Olive Oil
- 1/2 cup Grated Parmesan Cheese
- 2 cloves Garlic, minced
- 1 tsp Dried Rosemary
- 1/2 tsp Salt
- 1/4 tsp Black Pepper
Instructions
- Preheat oven to 400°F (200°C).
- Place potatoes in a large pot and cover with cold water. Bring to a boil and cook for 8-10 minutes, until slightly tender. Drain well.
- In a large bowl, toss potatoes with olive oil, parmesan cheese, garlic, rosemary, salt, and pepper.
- Spread potatoes in a single layer on a baking sheet.
- Roast for 30-40 minutes, or until golden brown and crispy, flipping halfway through.
- Serve immediately.
Notes
- For extra crispy potatoes, parboil them for a shorter time.
- Use a high-quality parmesan cheese for the best flavor.
- Don’t overcrowd the baking sheet to ensure even browning.
